Peanut Butter Chicken and Noodles

This one is a favorite around here and quickly gobbled up by everyone. Plus the kids eat their veggies, since they are covered in a peanut butter sauce

2-4 packages of oriental Ramen noodles (we use 4, since we like a lot of noodles - you will need at least 1 oriental package, and the rest can be whatever flavor you have laying around)

Veggies - Broccoli, snap peas, carrots, etc -whatever your family will like

1 1/4 cups water

1/4 cup peanut butter - any kind you prefer (I just eyeball it)

1/4 cup soy sauce

2 TBSP packed brown sugar

1 TBSP cornstarch

Crushed Red Pepper - add as much or as little as you like

2 cups cooked chicken

Green Onions

Water Chestnuts, bamboo shoots (optional)

Chopped Peanuts (optional)

Directions:

In a wok (or other large pan), whisk together the water, peanut butter, soy sauce, brown sugar, cornstarch, red pepper, and oriental seasoning packet (you just need 1 from the Ramen). Whisk until smooth. Cook over medium heat until thick and bubbly.

Meanwhile - cook the Ramen according to directions (I assume we all know how to make Ramen) - you could also use spaghetti

Once the sauce is thickened, add the chicken, veggies (you may want to steam beforehand, depending on how you like them), water chestnuts, and bamboo shoots to sauce and heat through. Add noodles to the mixture - toss to combine. Top with green onions and peanuts.
